Santiago Guerrero, head chef at London restaurant, Iberica Food and Culture, explains the relationship between food and sherry:

In June, to celebrate 175 years of producing great sherry, Gonzalez Byass released a limited edition Tio Pepe. Tio Pepe Fino En Rama is taken from the middle of the cask when the flor (the covering of yeast) is at its thickest. It truly captures the very essence of this great Fino sherry. There were just 175 cases made which sold out almost immediately!

Santiago explains how to prepare one of his classic tapas creations.
We asked chef Santiago Guerrero to choose the perfect Tio Pepe and Tapas combination from his menu at Iberica Food & Culture. "I'd go for Sardinas con Gazapcho or the Caballa con Oreja de Cerdo which is mackerel seared in a pan served with glazed pigs' ears. There again, you can't go wrong with simple ham croquetas - they are wonderful with a chilled glass of fino."
