1kg new potatoes
1 Spanish onion
2 garlic cloves
1 red chilli
Cayenne pepper and/or smoked paprika
Can of chopped tomatoes
For the sauce fry up the chopped onion, garlic and chilli in the oil until the onion is translucent. Add a pinch of cayenne and/or paprika to taste. Add the tomatoes, season and gently cook down for about 15mins.
Boil the potatoes, halved or quartered, for 10mins.
Whilst they are cooking, gently fry the chorizo. It will release its lovely, red oil.
Add the potatoes to the chorizo and cook until they start to brown.
Pop them into a bowl and pour the sauce over.
Serve with salad and good bread to soak up the juices.
