Introducing the Fino and Fizz cocktail from Aperitif by Kate Hawkings (Quadrille, £16.99). Shamelessly lifted from Ryan Chetiyawardana’s book Good Things to Drink (he calls this drink Bubbles and Byass), this mix shows how brilliantly dry sherry can work in a long drink.
What you need:
50ml Tio Pepe Fino
15ml Apricot Liqueur
Sprig of basil
How to make:
Mix the sherry and liqueur in a glass, add plenty of ice and top with soda water. Give it a stir then garnish with a sprig of basil and a green olive.
