La Escalera

La Escalera is inspired by the story of the sherry drinking mice of Tio Pepe. As the story goes, one of the winery workers had a little soft spot for the often unwelcome cellar guests. He found it extremely unfair that he was allowed to drink all the sherry he wanted while the mice could not. To rectify this he built a little ladder leading up to a glass full of sherry, which the mice could sipple on all day long. This cocktail was crafted by the very talented Lorenzo Roccio from The Dorchester, London.

What you need:NO 1 LORENZO

60ml Tio Pepe Fino
20ml Chinotto Liqueur
10ml Triple Sec
2 drops salt solution 4:1
Top with lemonade

How to make it:

Combine all the ingredients in a shaker, apart from the lemonade. Shake together and pour into a highball glass with ice, top with lemonade and stir gently. Garnish with lemon oil mist and a Parmesan crisp.
