The Sea, Spice, Citrus & Soil pays homage to the three towns that make up the sherry triangle: Sanlúcar de Barrameda, El Puerto de Santa María & Jerez de la Frontera. Cameron explores and highlights the differences in climate, terroir, town history and of course, culture. He believes these differences really diversify sherry wines and is for this reason he choose to incorporate the unique flavours of each town in this cocktail.


What you need:

50ml Tio Pepe Fino En Rama (This recipe uses 2017 release)
30ml Blood Orange Sherbet
5ml Saffron
2.5ml Italicus
60ml Sparkling water

How to make:

Place ingredients in shaker (except water) and throw 5 times to aerate cocktail. Strain over Block ice in small wine glass. Garnish with fresh mint in small Venencia and Blood Orange zest.
