2013 Release of Tio Pepe En Rama Has Arrived

A Careful Selection Process

In October 2012 head winemaker Antonio Flores selected 100 barrels from just two of the ancient Tio Pepe soleras: Constancia and Rebollo.  The selection from each solera (the traditional system for blending and ageing sherry) was to identify butts which would develop a particularly thick, compact and consistent yeast covering (flor) to impart the distinctive, rich bready aromas and flavours that characterise a great fino.

The Tio Pepe soleras rest in the historic Gonzalez Byass bodegas in Jerez.  Here the autumn was warm and rainy followed by a mild winter which allowed the protective layer of flor to thrive.  Of the original 100 casks, 67 were then selected for their finesse and intensity both in aroma and palate and then bottled in spring, the period when flor growth is at its thickest.

Drinking window
