Clams with Tio Pepe

Clams with Tio PepeIngredients

1kg clams

50g good ham (Serrano is perfect)

Glass of Tio Pepe

Handful of chopped parsley

2 cloves garlic

Olive oil

Tablespoon of flour



Lightly fry the garlic in a good splash of oil.  Add the chopped ham and parsley and stir for a minute.

Add the flour, stir and cook for a minute.

Slowly add half a cup of water, stirring all the time until the sauce thickens.

Pop in the cleaned clams and a glass of Tio Pepe..

Cover and cook until the clams have opened.

Good with a crisp salad.
