La Carboná’s Tomato & Jamón Salad

Any plate with jamón is destined to be served with a glass of Fino – the savoury umami characteristics of the Sherry compliment the delicious nutty flavour of jamón.


  • 1 salad tomato
  • 1 kumato tomato
  • 1 cherry tomato
  • 1/2 mango
  • 1/2 radish
  • Smoked meat
  • Jamón ibérico
  • Basil
  • 1 tsbp. olive oil
  • 1 tsbp. sherry vinegar


    1. Cut all the tomatoes in thin slices, the mango into cubes and the radish in very thin slices.
    2. Add the smoked meat and ham.
    3. Season with olive olive, sherry vinegaer and a few leaves of fresh basil.
