Prawn Salad

Prawn SaladIngredients

250g of prawns (in their shells)

500g potatoes

1 red bell pepper

Salt and pepper

Mayonnaise

Instructions

Peel the prawns.  Pop the heads and shells into a litre of salted, boiling water and cook for 10 minutes.  Strain and retain the broth.

Grill the red peppers and when the skin is black peel it off and cut the peppers into thin strips.

Peel the potatoes, cut them into small cubes and cook them in the prawn broth.  When they are done add the peeled prawns for about 30 seconds until they are pink.  Strain.

Mix the prawns and potatoes with plenty of mayonnaise and the peppers.

Serve with good bread or toast.
