An eight year old Fino selected from a tiny number of casks in the Tio Pepe Solera still retaining a delicate layer of Flor. Moving into a Fino/Amontillado style this is more intense (than the Una Palma) and much more concentrated. The flavour is fuller and drier and very long on the finish. Wonderful to drink on its own, but ideally needs a slice of dried jamon. Serve lightly chilled. Total release: less than two barrels.
